A warm bowl of soup is something that I crave all year round. It’s extra comforting during winter. If you love soups this one pack a punch be it simple, healthy and of course delicious, yes this colourful and beautiful dish is called Carrot and coriander soup,This dish uses coriander roots, which have a deeper and more intense flavor.This carrot and coriander soup is very simple to make. Here is the recipe.
1 tbsp olive oil
1 tsp coriander seeds
1 tsp fresh ginger chopped
2 Onions medium size, chopped
2 Celery stalks chopped
3 Garlic cloves crushed
600g Carrots peeled and sliced
900ml vegetable stock
25g Fresh coriander roughly chopped, including stem
Freshly ground salt and pepper
Heat the oil and butter over a medium heat then add the onion, coriander seeds,celery, ginger and garlic,cook until translucent.
Add the carrots, stock and seasoning,bring to the boil, and then reduce to a simmer.
Cook for 10 minutes or until carrots are tender, add in the coriander.
Blend the soup, adjust the seasoning if necessary and re-heat.
Serve garnished with some chopped coriander and crusty bread.
