Apple Banana Bread with Maple Syrup recipe from Prakash Kumar D, Executive Chef, The Woodrose Club by Brigade.
Ingredients:
- Maida – 400 g
- Eggs – 2 (Large)
- Butter – 150 g (Salted table butter)
- Sugar – 250 g (powdered)
- Sour Cream – 60 g
- Robusta Bananas – 3 Nos (Medium – Ripe & mashed)
- Apple – 200 g (peeled & diced)
- Vanilla Essence – 1 tsp
- Baking Soda – 1 tsp
- Cinnamon Powder – ¼ tsp
- Maple Syrup – 2 tbsp
Method:
Separate the egg white from the yolk. Add the egg white to a large bowl and whisk with a hand beater, add melted butter, sour cream and egg yolk and whisk together. Add in sugar, mashed bananas and mix well. In a separate bowl mix maida, cinnamon powder and baking soda together and add it to the egg white mixture 50 g at a time and continue to stir. Gently fold in the diced apples and transfer the mixture to 2 eight-inch baking trays (pre greased).
Preheat the oven to 160 degrees Celsius, place the trays on the middle rack of the oven and cover the trays with baking paper. Bake for 50 to 60 minutes (stick a wooden toothpick in the middle of the loaves, if it comes out clean then the Apple Banana Bread is well done). Remove from the oven and allow the Apple Banana Bread to cool, drizzle maple syrup over the bread and serve with love.
