Recipes from Chef Thayanithy, Executive Chef at Signature Club Resort

INGREDIENTS

  • Banana Stem: 125gm chopped
  • Sugar: 1/2 to 1 tsp
  • Lime: ½ no
  • Salt: As required
  • Water: 75ml

METHODS

  1. Soak the banana stem in 1 cup of water and leave it for an hour to make it soft.
  2. With the help of blender, grind he soaked banana stem for its juice.
  3. Separate the fibres using the mesh sieve and add lime juice, sugar and a pinch of salt to the juice.
  4. Stir well and serve chilled. Garnish with mint leaves and lime wedges.
